1/2 brown onion

350g ground chicken

1 egg yolk

1 teaspoon grated ginger root

Sauce

1 Tablespoons of sugar

2 Tablespoons of Soy Sauce

2 Tablespoons of Mirin

3 Tablespoons of water

1/2 teaspoon Katakuriko

Instructions

Chop brown onion finely. Mix ingredients for that sauce in a tiny bowl and hang aside.

Inside a large bowl, put chicken, onion, yolk, ginger root, salt and potato starch, and blend perfectly until very sticky. Divide into 16 pieces and shape like small round or oblong hamburger patties.
